It depends on exactly what your topic is. A few general human rights sources I can think of include:

I don't normally read a lot of text books on human rights, but I do read HR related non-fiction. Some good books in that category:
link - Tells the story of two brothers growing up in one of the worst neighborhoods in Chicago. A heartbreaking but eye-opening story about gang wars and poverty and the children caught in the middle of it. If this is for an English class, a nonfiction book like this might be great material to read and write about.
A great book about how the American education system is failing its students in regard to social justice issues is Jonathan Kozol's

As for websites, a great place to start is the

"Human Rights" is a broad topic, though. Are you going to write about human rights as a concept, or a specific human rights crisis? I've provided resources for both of these possibilities. If you want more on a specific topic, let me know. I love to help people learn about human rights.
If you want a recommendation of something simple but important to know, I'd write about the Universal Declaration of Human Rights - what it says, why it was written, who wrote it, and how it's used today to defend human rights.
