I think he was blinded by that love and would do anything and did for Anck. Then for his betrayal and murder of Seti he was cursed with the Hom-Dai. That curse turned him into a monster. I never thought that the man Imhotep was really evil. And even when he was immortal he also loved Anck. How can a person or being that is capable of love be truly evil? I don't think that's possible. :)
