Pocahontas doesn't celebrate because it is not her tradition. Historically when she converts to Christianity I'm sure she celebrates it as we do today, but more emphasis on the Nativity.
Merida, Aurora, and Snow White probably don't understand it yet because St. Nicholas is just barely making himself known around their time periods. Maybe they wouldn't celebrate it.
Cinderella, Ariel, Belle, Tiana, Rapunzel, Elsa and Anna celebrate it just the same as we do. Christmas parties, Christmas carols, gifts and waiting for Santa to come and visit them.
All of that is based on time periods. If we looked at the Disney Princess from the years their movies were made or them as now they would probably go to the House of Mouse hopefully not to get snowed in again.
