Rapunzel was at least 22. The ending narration states that Rapunzel and Eugene get married after "years and years" of asking. The absolute earliest the first proposal could have been was when she was 18 years and one day old (the night they spent in her tower). "Years and years" is at least 2+2 years, or 4 years. Therefore, Rapunzel was at least 22 years and one day old when she became engaged.
Ariel was at least 16 years old, but the amount of time between Eric and Ariel's first kiss and their marriage is not specified. She was 16 when they first kissed, so she was at least 16 when she was married.

I'm pretty sure Eric and Ariel got married when Ariel was 16. As for Rapunzel, I honestly think Eugene exagerrated when he said "years and years" because in Tangled Ever After it really didn't seem like much time had passed, they even looked completely the same so I assume she was 18.
When my wife was 22, she looked practically identical to how she looked in pictures when she was 16. Also, many women will do anything to lose weight to look perfect on their wedding day (not that excess weight is something a Disney princess would ever have a problem with). So basically, you can't go by the appearances of Rapunzel and Ariel to guess whether they have aged a few years. Besides, it's always folly to take the sequels too seriously. Obviously, the animators of Tangled Ever After wanted everyone to be instantly recognizable, which explains why the braiding girls haven't aged.
